gratitude

Recently I came across my old journals from High School (cringe) and apparently for about six days I was really keen on keeping tabs of THINGS I WAS GRATEFUL FOR. I'm sure I got this idea from Oprah and I was so serious about it that I dedicated an entire "Gratitude Journal" to it. For six days. Which, if you knew me in high school, it's kinda remarkable that I was actually grateful for anything for that long because I was generally a big sarcastic pain-in-the-ass to be around.

So while I won't embarrass (or incriminate) myself by listing the things that made my heart swell with gratitude when I was seventeen, in the spirit of Thanksgiving, I'll write what I'm most grateful for this year.

Healthy parents and parents-in-law, not having credit card debt, my tiny fuel-efficient car, happy cat Scout that keeps us laughing, vegan bloggers, Chris's continued employment, my ipod touch (seriously - it's waaaay awesome), being able to say President Obama in just a few short months, being more than halfway done with my graduate degree, and always, always I am most grateful for Chris and his constant love.

Hope you all have some thing to be grateful for this year. Have a wonderful Thanksgiving!

someone please help us stop the madness

So you know how in most relationships one person kinda keeps the other person from going off the deep end? Like occasionally, Spouse 1 will say to Spouse 2 "Maybe you've bought enough socks this month"? or Spouse 2 will say to Spouse 1 "Maybe you don't need to eat that entire bag of Reese's cups in one day"? Well normally Chris and I have that . . . except when it comes to buying DVDs.

Although we have really cut back on our consumerism this year, we are still crazed junkies for DVDs. And instead of Spouse 1 saying to Spouse 2, "You know, I don't think we need to buy another 20* DVDs when we have so many we haven't opened and watched yet", Spouse 1 says "Let's buy this movie we've never seen because it's only $5.99" and Spouse 2 says "Awesome idea! Let's get the three sequels while we're at it!" Which leads to several months a year (**cough** Deep Discount Sales, Black Friday **cough**) where we will buy so many DVDs that it's embarrassing to count them all.

*I wish this were some sort of exaggerated number like "I have 1000 things to do today" but it's not. Is there any other way to buy DVDs than in multiples of 10?

weekend foodie pics

These were the vegan cupcakes I made for Chris's birthday - chocolate cupcakes with peanut butter frosting and peanut butter cupcakes with chocolate frosting. Recipes from the wonderful Vegan Cupcakes Take Over the World. They were really, really good.

As I'm moving from vegetarian to vegan, Chris has become my Guinea pig for many a recipe. I've been struggling to find a tofu dish that he likes and I think I finally found one! This was my first attempt at a veggie potpie with tofu and it was a huge success. It was also my first time ever making a pastry crust and I think I did pretty good. This is definitely a Sunday recipe as it took hours of prep/chill/cook time, but the end result was worth it. The recipe is from Robin Robertson's Vegetarian Meat and Potatoes Cookbook. Sorry for the ginormous picture! :)

letter to sign stealer

dear person that stole my Obama yard sign,

i'm writing to thank you for sealing my yard sign three weeks ago.  if you hadn't stolen my yard sign, I wouldn't have visited one of our local Obama campaign offices to get a new one.  if i hadn't visited the office, i wouldn't have been asked to volunteer for the campaign.  but since you did steal my sign, and i did start volunteering for Obama, I got to have one of the most fulfilling experiences of my life these last three weeks.

i've spent time calling folks and knocking on doors (a lot of doors) these last three weeks and met some of the most dedicated, intelligent and passionate people you could ever wish to meet who worked tirelessly for Obama.  I am incredibly proud to be a teeny, tiny part of that effort and resolve to never sit on the sidelines of democracy again.

so thank you sign stealer, and also SUCK IT BITCHES 'CAUSE WE WON!!!!

love,
laura

Get Out the Vote!

Chris posted these lunch notes that he made for me before I set off for a long (and kinda) hot day of canvassing for Obama.
